  • Surface Appearance: Skinless batons, approx. 23 mm in diameter and 18 cm long; smooth, undamaged surface, light brown colour with visible ingredient marbling.
  • Cross-section Appearance: Medium-ground structure, evenly distributed ingredients, visible meat and fat pieces (3–5 mm); meat colour: pink to red, fat: white.
  • Consistency: Fairly firm.
  • Taste & Aroma Profile: Characteristic of cured, lightly smoked and scalded sausage; moderately salty with detectable spices.
